The humble potato has never looked so healthy, fresh and flavoursome.
We probably enjoy spuds more often than we realise because they go so well with so many different meals.
Whether they’re roasted, deep fried, mashed, steamed, boiled, hashed or rolled into gnocchi, potatoes are a staple side served during meal time in households all over Australia.
Taking the humble spud to another level is Luke Fisher at the SpudBAR on Market Street in Fremantle.
“One day I was visiting my brother in Victoria and he took me to a SpudBAR for lunch,” Fisher told Herald Dining.
A baker by trade and with some hospitality experience behind him, Fisher was determined to bring the SpudBAR concept to Western Australia.
“It was too good an opportunity to pass on and I wanted to get behind an idea that puts good, simple, tasty food into people’s mouths,” he says.
“I investigated whether we had anything like this in WA and we didn’t.
“I decided then and there that I was going to bring this idea home.”
These boulder-sized potatoes are loaded with so many fresh ingredients they make for a very filling lunch or dinner.
I tried the mammoth Chilli Bean Salsa — a locally grown spud topped with mild chilli bean, sweet tomato salsa, corn, tasty cheese, shredded cabbage and vibrant spring onions.
And to round things off, there was a generous spoonful of light sour cream on the summit.
There’s also a handful of corn chips which are perfect for scooping up mouthfuls of this delicious dish.
According to Fisher, customers love the Pulled Pork but his current favourite is the Moroccan Chickpea and Kale which is served with warm moroccan chickpeas, kale, wild rocket, bright red beetroot cubes, quinoa and a tangy hummus. Perfect for vegetarians.
If you’re after something a little different, you can choose a Sweet Potato base.
“All the spuds we serve are WA grown,” Fisher tells me between mouthfuls.
“Most of our ingredients are grown locally so customers can expect quality when they eat here.”
If you’re after something a little different for your next event or function, SpudBAR also does catering.
“People see our catering as a fun and affordable option for their parties and functions,” says Fisher.
The SpudBAR catered for a wedding recently which was a huge success.
“We received so much positive feedback from guests as well as the couple getting married and their family,” he says.
“There’s no fuss and it’s easy to set up.”
