Nestled in the vibrant Leighton Beach precinct, Palette has quickly become a beloved local gem since opening its doors in November 2022. This family-owned restaurant is the brainchild of Jade Van Herwaarde, her partner Jason Witt, and Jade’s mother, Christine Scanlan. At just 22 and 23, Jade and Jason traded late-night parties for early morning starts, pouring their passion into this unique venture.
Originally envisioned as a gallery with a small coffee setup to support local artists, Palette evolved into a full-fledged dining destination. The trio transformed a tired, old shopfront into a chic, laid-back beachside venue, perfect for showcasing art. Their six-week renovation was a labor of love, involving everything from polishing concrete to painting and upholstering, creating a beautiful blank canvas for both culinary and artistic expressions.
Palette hosts monthly exhibitions having featured over 100 local and emerging artists since opening, offering a dynamic space for solo, duo, and group shows. The restaurant’s Mediterranean-inspired menu complements its artistic ambiance, with a variety of small and large share plates for lunch and dinner. Highlights include house-made rosemary focaccia, cauliflower with sesame dressing, and an interactive octopus dish that delights with its transforming lemon foam. The baked ricotta hotcakes and Turkish eggs with pumpkin muhummara are breakfast favourites served daily until 11:30am.
The famous summer pavlova, praised by food critic Rob Broadfield, is a must-try year-round, and Palette’s specialty coffee from local roastery Grouch and Co is the perfect pick-me-up. The venue also features a retail area with handcrafted gifts from local makers, making it a hub where food, art, and community converge. Whether you leave with a full stomach or a new piece of art, Palette offers a unique and enriching experience for all who visit.
Palette’s next art exhibition is Thursday, May 23 from 5-7pm and is open to the public with complimentary refreshments provided. This is a collaborative exhibition with Tunbridge Gallery and will be a collection of Aboriginal artwork from communities all over Australia.
