Forget politics -the real vote this year is for Carrington’s Bar and Grill, which is once again competing in the 2025 AHA & Little Creatures WA’s Best Steak Sandwich competition after taking out a massive win last.
This year, Carrington’s has turned up the volume with The Wild Thing – a rock ’n’ roll inspired steak sandwich named after the iconic The Troggs song. Owners Ash and Lorene Cranenburgh said they wanted to give the classic pub staple a modern spin.
“The candy bacon, beef bacon and frickle [fried pickle] were the wild things, and from there we thought we could have some fun with it and adopt the ‘Wild Thing’ song – it just had so much synergy with our creation,” Ash said.
The Herald was recently invited to Carrington’s to discover for ourselves what makes The Wild Thing so irresistible.

It all starts with the star of the show – tender scotch fillet, which is slow-cooked to melt-in-your-mouth perfection. This perfectly-cooked steak brings a deep, rich beefy flavour without a hint of chewiness or gristle.
Layered on top is beef bacon which is cured, dried, smoked and sliced in-house. This isn’t your average bacon – it’s thicker, more savoury, and carries a beautiful peppery aftertaste that lingers long after your last bite.
Adding some rockstar flair is the sweet candy bacon, a sticky-sweet taste that brings just the right amount of sweetness to balance out the savoury richness. It’s a flavour combo that dances on the palate.
No great steak sanga is complete without the extras, and Carrington’s has nailed the details. The frickle – a fried pickle – is crunchy, tangy, and provides a satisfying zing that cuts through the richness. Diced onions (because nobody wants a stringy bite) add a little bite, and a generous slathering of house-made sauce ties everything together.
